Stuffed Jalapenos

Just in time for your Christmas or football party. These are a hit at parties because they are something different and something with a good zing to them. Stuffing jalapenos, wrapping them in bacon then cooking them takes most of the heat out of these usually fiery peppers. Make sure you warn your guests about what they are eating before letting anyone pop them in their mouth. By coincidence, mine were served beside a dish of hot wings that came with blue cheese dressing and celery sticks. These helped when things got too hot for some of the samplers.



20 jalapenos washed and cut carefully in half lengthwise, and seeded
10 slices of bacon precooked slightly in the microwave (on paper towel) 3 minutes and cut in half lengthwise
250 g softened flavoured cream cheese (I used 1 tub of Kraft roasted garlic) (or add garlic powder to plain cream cheese)
2 cups grated cheese (any kind, but I used marble)



Fill the jalapeno halves with cream cheese. Wrap a slice of bacon around the stuffed pepper and place on a baking sheet or in a baking pan sprayed with non-stick coating. Sprinkle with cheese and bake for 1 hour in a 350F oven. As mentioned, serving with a dish of blue cheese dressing and celery sticks will help if someone finds them too hot. Serve with a nice chilled Gewurztraminer.
