Diet Cabbage Soup

This soup almost takes more calories to eat than it contains. It's another good anti-cancer soup as well, packed with polyphenols and lycopene, important antioxidants that help repair damaged cells within our bodies. Try going organic to make it even healthier.



  • 3 cups low sodium tomato juice ( or Motts L/S Garden Cocktail)
  • 3 cups low sodium beef stock (or organic vegetable broth)
  • 2 teaspoons fresh lemon juice
  • 3 cups 1/2 inch diced cabbage (approx size and quantity)
  • 3 apples, peeled, cored and diced small
  • 1/3 cup onion flakes
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper



In a large pot, combine tomato and lemon juices, onion and spices. Add chopped cabbage and apples and bring to a boil on high heat. Lower heat to medium low and simmer for 20 minutes or until cabbage and apple are very soft.

Warning: If you don't have an anti-gas medication in the house like Beano, then beware of the back-firing this soup might cause. Not recommended for the night before your wedding or your Karaoke debut.
