Blueberry Cashew Balls

Another super healthy, "lose weight" option to sweets or those sugary cereal bars out there. A snap to make in minutes! Take them hiking, eat them for snacks or serve them as a dessert.



1 cup raw cashews (unsalted unroasted)
1 cup oatmeal (I prefer the olde fashioned)

3/4 cup blueberries (frozen or fresh)
8-10 dates, pitted
1 tsp pure vanilla extract or vanilla beans
1 tsp grated lemon  zest
1/4 tsp sea salt



In a food processor, pulse the oatmeal and cashews for 2 minutes.

Add the rest and pulse until it is melded together and well mixed.

Hand roll into palm sized balls, using wet hands if needed.

Put in the fridge and chill for 30 minutes before eating.
