Road Trip Granola

Borrowed from the Home Hardware catalogue, this light recipe is sweet, salty  and gooey without any bad additives or unnecessary fillers. Experiment with various nuts and things like plain popped corn or carob chips.

1 cup raw almonds with or without skin
1 cup unsalted peanuts
1/2 cup shelled raw pumpkin seeds
1/4 cup raw shelled sunflower seeds
3 TBSP pure maple syrup
1 tsp celery salt
1/2 tsp coarse sea salt
1/2 tsp ground cumin
1/4 tsp ground cinnamon
Add later : 1/2 cup raisins
1/2 cup dried cranberries



Preheat the oven to 375F.  Cover the bottom of a cookie sheet with moistened parchment paper (moisten both sides).
In a large bowl mix all the ingredients except the raisins and cranberries. Spread onto the parchment paper and put into the oven for 10 minutes. Remove and stir. Spread it out slightly but make sure everything is touching slightly. Bake another 8-10 minutes until slightly darkened. While still warm, add the raisins and cranberries. Let cool and store in airtight containers.
